One Pot Wonder

This recipe is for all of you dish-washing haters!   The entire meal was made in one pot, which I think intensified the flavor of the rice and carrots.  I have to say that I was surprised at how well this recipe turned out considering I’m not a fan of dark meat.  The rice simmered in a mixture of chicken broth, honey, lemon juice/peel and soy sauce — it made for a sweeter taste that I really enjoyed.  The recipe calls for “calrose rice” which is like a sushi rice.  I didn’t know what this was or really care to search high and low for it so I used the brown rice in the pantry and the dish still turned out great.  I also used boneless chicken thighs, this way the chicken mixed into the rice more as one complete dish.

For dessert, I fired up the grill as usual, but this time for something sweeter–grilled peaches!  I have to admit, I tried a fancy recipe with a balsamic glazed but completly burned the reduction sauce and smoked up the entire kitchen–woops.  Sooo, I ended up just grilling the peaches plain and serving them with ice cream.  Just make sure you scrape off the grill as much as you can to avoid your peaches tasting like grilled chicken…
