Loving These Lentils

Although I thought fall was here to stay in New Orleans after a cold Halloweekend…we were tricked again.  Luckily, I still had time to make a Lentil-Tomato Stew I’ve been eyeing before the weather got warmer.  Unlike a traditional lentil soup, this had a tomato base.  My roommate, Melanie, and I made this dish in under 30 minutes and were both surprised by how flavorful it was.  Definitely a very vegetarian-friendly dish!
